Limoncello Fruit Salad

July 11th, 2012

Oh my gosh I love this recipe. It’s so good on a hot summer day. And it’s super, super, easy! It’s basically just a bunch of berries and Limoncello. But I’m getting ahead of myself.

You’ll need:
2 Tablespoons of Limoncello (Not pictured till later, whoops. It’s a lemon liqueur, in case you weren’t aware. Sorry minors!)
4 Cups total of the following berries (feel free to change up the exact amount. 4 cups of mixed berries per 2 tablespoons of Limoncello is a good baseline, but experiment!):

Start by washing all the berries!

Then slice up the strawberries into fourths (or smaller pieces if you deem it necessary), and dump them into a big mixing bowl!

Next, add the blueberries, and toss/mix up the berries with a large spoon. Ready the Limoncello!

Pour the 2 tablespoons of Limoncello over the berries, then toss/mix them up again.

Now add the raspberries! We waited until now, because they’re a lot more fragile than the blueberries and strawberries, and wouldn’t really survive all that tossing.

Mix everything up, gently, one final time, making sure that awesome lemon flavor gets evenly distributed throughout all the berries. Then serve your fruit salad up in small bowls (or big ones, we won’t judge), and enjoy! The amounts/ratios of berries to Limoncello that we recommend aren’t super strict, so add more Limoncello if you feel like the lemon twang could be stronger! Experiment to find the perfect balance!

Nice and easy, wasn’t it? And so delicious, too! A great summer snack that’s really not bad for you, either! See you back here next week for more yumminess!
